If you are looking for a tasty new granola to add to your breakfast menu, here it is! This tasty option is so chewy and delicious.

Feel free to eat the granola as is, or as a topping on your yogurt. The world is your oyster.

We make a fresh batch every Sunday and use it through out the week as a quick and easy snack to grab on the go.

Ingredients

  • 4 cups rolled oats
  • 1 cup roughly chopped pecans (may swap for walnuts or cashews)
  • 1 cup pumpkin seeds (raw pepitas)
  • 1/2 cup coconut flakes (optional)
  • 1 tsp salt
  • 1 1/2 tsp cinnamon powder
  • 1/2 cup extra virgin olive oil
  • 1/2 cup maple syrup
  • 1/2 cup raisins

Directions

Preheat the oven to 350º F. Line a large baking sheet with non-bleached parchment paper. Set aside.

In a large bowl, combine the rolled oats, pecans, pepitas, salt and cinnamon. Stir to combine.

In the same large bowl, add the olive oil and maple syrup. Stir well to combine evenly. The raisins do not get added until the cooking process is complete.

Pour the granola on to the line baking sheet, spread to evenly. Bake for 22-24 minutes, until golden in color.

Once complete, remove from the oven and let it cool. When cooled, break it apart and add the raisins. Store in a sealed container at room temperature for up to 2 weeks.

Enjoy as is or as a topping on yogurt or banana nice cream. Yum!
