Ingredients
- 4 cups rolled oats
- 1 cup roughly chopped pecans (may swap for walnuts or cashews)
- 1 cup pumpkin seeds (raw pepitas)
- 1/2 cup coconut flakes (optional)
- 1 tsp salt
- 1 1/2 tsp cinnamon powder
- 1/2 cup extra virgin olive oil
- 1/2 cup maple syrup
- 1/2 cup raisins
Directions
- Preheat the oven to 350º F. Line a large baking sheet with non-bleached parchment paper. Set aside.
- In a large bowl, combine the rolled oats, pecans, pepitas, salt and cinnamon. Stir to combine.
- In the same large bowl, add the olive oil and maple syrup. Stir well to combine evenly. The raisins do not get added until the cooking process is complete.
- Pour the granola on to the line baking sheet, spread to evenly. Bake for 22-24 minutes, until golden in color.
- Once complete, remove from the oven and let it cool. When cooled, break it apart and add the raisins. Store in a sealed container at room temperature for up to 2 weeks.
- Enjoy as is or as a topping on yogurt or banana nice cream. Yum!
