If you are a fan of Indian food, you have very likely heard of Matar Paneer (Peas and Fresh Cheese). Matar Tofu is our vegan friendly version of Matar Paneer... might I add, it is absolutely delicious!
Matar Tofu is made by cooking tofu and peas in a spicy onion, tomato masala (mixture of spices). It serves well with roti, naan, rice or quinoa.
Feel free to adjust the spice level. If you would like, experiment by adding other vegetables to the dish such as corn, potatoes and/or bell peppers.
I often make extras to use the leftovers for my "Punjabi Style Pizza". If you love this, you have to try our Pizza!
