Ok, so this quarantine has definitely brought out my sweet tooth in a good way!

We made our favorite dessert bars this morning, so I decided to snap a pic and share it on Bobbieleelicious. You are welcome! It is a mix of dates, nuts, hemp seeds, and sea salt, covered in a layer of dark chocolate. The perfect sweet, salty, and crunch-nutty balance. Darling, it is absolutely delicious (and healthy)! Perfect for a midday snack or dessert.

Feel free to swap the nuts around with whatever you have on hand.

If your dates are hard, soak them in room temperature water for 30 minutes prior to making the bars.

Ingredients

    Nuts Bars

  • 14-15 Medjool dates, pitted
  • 1 cup pecans
  • 1/2 cup walnuts
  • 3 tbsp hemp seeds
  • 1/2 tsp sea salt
  • Chocolate Topping

  • 1 cup dark chocolate chips, melted (if needed, vegan)
  • 1 tbsp unrefined coconut oil

Directions

Line a 9x5 loaf pan with unbleached parchment paper.

Add the Nut Bar ingredients to a food processor. Process until the dates and nuts and seeds are broken down to a finely chopped mixture.

Remove the mixture from the processor and add it to the 9x5 loaf pan. Press it down, set aside. (If the nut mixture is crumbly and falling apart, add 1-2 tbsp of water, this will help it stick together. It should resemble a sticky paste-like texture)

Melt the chocolate chips and coconut oil (I placed a glass bowl on top of a pot of boiling water). Mix it well. Pour the melted chocolate over the nut mix.

Place in the freezer for 20 minutes before eating.

May store in an airtight container, in the freezer, for 3 weeks (though I doubt they will last that long)

Remove from the freezer just before eating and enjoy cold (my preference) or room temperature.
