Thin Crust (Spelt Flour) Pizza

Ingredients

  • *Crust
  • 3/4 cup warm water, between 110-115° F (may need to add 1-3 extra tbsps)
  • 3/4 tsp honey (or cane sugar)
  • 1/2 tsp active yeast powder
  • 1 1/2 cups white spelt flour (or a bread flour works well also)
  • 1/2 tsp sea salt
  • *Toppings
  • Pizza sauce
  • Mozzarella cheese
  • Tomatoes
  • Basil

Directions

  1. Preheat the oven to 425°F.
  2. In a medium sized bowl, add the water and honey (or cane sugar), give it a stir. Sprinkle on the yeast and set it aside (allow it to sit 8-10 minutes).
  3. Add the flour and sea salt to the mixture and mix it with your hand until the flour is mixed in, form a ball of dough. Knead for a few minutes.
  4. Cover the bowl with a towel and allow it to rest for 6-7 minutes.
  5. Prepare your workspace by dusting some flour onto a surface. Using your hands and rolling pin, roll the dough out to your desired thickness (I personally feel pressing the dough with your hands creates a better crust). Transfer the pizza to a pizza pan.
  6. Using a fork, make some holes into the dough.
  7. Place the pizza into the oven and bake for 4 minutes. Remove the pizza from the oven.
  8. Spread the pizza sauce onto the pizza and top with desired toppings. Return the pizza to the oven and bake for 12-15 mins (option: for the last 5 minutes place the pizza pan on the top rack in the oven). The cheese should be slightly browned. Remove from the oven.
  9. Enjoy!
