Thin Crust (Spelt Flour) Pizza

Ingredients
- *Crust
- 3/4 cup warm water, between 110-115° F (may need to add 1-3 extra tbsps)
- 3/4 tsp honey (or cane sugar)
- 1/2 tsp active yeast powder
- 1 1/2 cups white spelt flour (or a bread flour works well also)
- 1/2 tsp sea salt
- *Toppings
- Pizza sauce
- Mozzarella cheese
- Tomatoes
- Basil
Directions
- Preheat the oven to 425°F.
- In a medium sized bowl, add the water and honey (or cane sugar), give it a stir. Sprinkle on the yeast and set it aside (allow it to sit 8-10 minutes).
- Add the flour and sea salt to the mixture and mix it with your hand until the flour is mixed in, form a ball of dough. Knead for a few minutes.
- Cover the bowl with a towel and allow it to rest for 6-7 minutes.
- Prepare your workspace by dusting some flour onto a surface. Using your hands and rolling pin, roll the dough out to your desired thickness (I personally feel pressing the dough with your hands creates a better crust). Transfer the pizza to a pizza pan.
- Using a fork, make some holes into the dough.
- Place the pizza into the oven and bake for 4 minutes. Remove the pizza from the oven.
- Spread the pizza sauce onto the pizza and top with desired toppings. Return the pizza to the oven and bake for 12-15 mins (option: for the last 5 minutes place the pizza pan on the top rack in the oven). The cheese should be slightly browned. Remove from the oven.
