Ingredients

  • 3 tablespoons fresh lemon juice

  • salt and pepper
  • 1/4 small red onion, thinly sliced
  • 5 cups baby spinach
  • 2 cups thinly sliced strawberries
  • 1 cup pecans or walnuts
  • 5 oz feta, crumbled (or other cheese)
  • Optional: Fresh Mint

Directions

  1. Prepare the Dressing: In a small bowl, whisk together the fresh lemon juice, Dijon mustard, and extra virgin olive oil. Season with salt and pepper to your taste. Adjust the balance of acidity and oil according to your preference.
  2. Assemble the Salad: In a large salad bowl, combine the baby spinach, thinly sliced strawberries, red onion, and pecans. Crumble the feta cheese over the top.
  3. Dress the Salad: Drizzle the prepared lemon vinaigrette over the salad, gently tossing to ensure everything is evenly coated. Taste and adjust seasoning with additional salt and pepper if needed.
