Ingredients

  • *Chickpea Salad
  • 2 cups cooked chickpeas
  • 1/2 teaspoon sea salt
  • black pepper
  • 1 teaspoon turmeric powder
  • 2 tablespoons yellow mustard
  • 2 tablespoons fresh lemon juice
  • 4 tablespoons mayonnaise (may substitute with tahini)
  • 2 cloves garlic, minced or pressed
  • 1/2 cup bell pepper, finely chopped (red or orange)
  • 4 celery stalks, finely chopped
  • 2 green onions, sliced (or 1/4 cup red onions, finely chopped)
  • 1/2 cup dill pickle, chopped

Directions

  1. In a large bowl, smash the chickpeas with a fork or potato masher. Leave some whole, some half smashed, etc
  2. Add the salt, pepper, turmeric powder, mustard, lemon juice, vegan mayonnaise, and garlic.
  3. Now add all other ingredients and combine. Taste and adjust spices as needed.
  4. Serve as desired.

Recipe notes:

1 cup raw chickpeas is equivalent to 1 3/4-2 cups cooked chickpeas
