Ingredients
- *Salad
- 1 cup cooked quinoa
- 1 roma tomato, diced
- 1/4 cup red onion, diced
- 1/4 cucumber, diced
- 3 tbsp parsley, chopped
- 3 tbsp cilantro, chopped
- 2 tbsp hemp seeds
- 2 tbsp pumpkin seeds
- sea salt and pepper to taste
- *Dressing
- 1/4 ripe avocado, mashed
- 1 clove garlic, minced
- 2 tbsp extra virgin olive oil
- 2 tbsp apple cider vinegar (or lemon juice)
Directions
- In a medium bowl, mix the quinoa, tomato, onion, cucumber, parsley, cilantro, hemp seeds, pumpkin seeds, salt and pepper (to taste)
- For the dressing: In a small bowl, combine the avocado, garlic, olive oil and apple cider vinegar/lemon juice
- Add the dressing into the salad bowl and enjoy!
