Oven Roasted Butternut Squash

Ingredients
- 1 medium butternut squash (peeled and cubed)
- 2 tbsp avocado oil
- 1 tbsp Herbs de Provence (optional)
- sea salt and pepper to taste
Directions
- Preheat the oven to 400° and line a baking sheet with unbleached parchment paper.
- Peel the butternut squash using a peeler and slice it in half. Remove the seeds. Cut the squash into 1/2 inch cubes.
- Place the cubed squash and all other ingredients to a bowl and mix so that all the pieces of squash are covered with oil and spices.
- Add the squash to the baking pan and place into the over for 30-35 mins.
- Remove from the oven and enjoy them warm as is or add them to a rice bowl, quinoa bowl, or as a taco topping.
