Oven Roasted Butternut Squash

Ingredients

  • 1 medium butternut squash (peeled and cubed)
  • 2 tbsp avocado oil
  • 1 tbsp Herbs de Provence (optional)
  • sea salt and pepper to taste

Directions

  1. Preheat the oven to 400° and line a baking sheet with unbleached parchment paper.
  2. Peel the butternut squash using a peeler and slice it in half. Remove the seeds. Cut the squash into 1/2 inch cubes.
  3. Place the cubed squash and all other ingredients to a bowl and mix so that all the pieces of squash are covered with oil and spices.
  4. Add the squash to the baking pan and place into the over for 30-35 mins.
  5. Remove from the oven and enjoy them warm as is or add them to a rice bowl, quinoa bowl, or as a taco topping.
