No-Bake Carrot Cake balls

Ingredients
- 5 medjool dates, pits removed
- 1 1/2 cups carrots, peeled and shredded
- 3/4 cup oat flour (GF if need)
- 1/4 cup rolled oats (GF if need)
- 3 tbsp raisins
- 1 tbsp hemp seeds
- 1/4 tsp cinnamon
- 1/8 tsp ginger
- 1/4 tsp nutmeg
- 1/4 tsp sea salt
- unsweetened shredded coconut (to roll the balls in)
Directions
- Prepare all the ingredients as noted in the list.
- In a medium sized bowl, add all the ingredients and mix with your hand until combined (the dates will form a paste like consistency). If using a processor for this step, process until combined.
- From the mixture, form 8-10 even sized balls. Roll the balls in some shredded coconut and then store them in the freezer in an airtight container.
- They store well in the freezer for up to 3 weeks.
Recipe notes:
The Medjool dates should be soft. If your dates are hard, soak them in warm water for 20 minutes prior to using.
