No-Bake Carrot Cake balls

Ingredients

  • 5 medjool dates, pits removed
  • 1 1/2 cups carrots, peeled and shredded
  • 3/4 cup oat flour (GF if need)
  • 1/4 cup rolled oats (GF if need)
  • 3 tbsp raisins
  • 1 tbsp hemp seeds
  • 1/4 tsp cinnamon
  • 1/8 tsp ginger
  • 1/4 tsp nutmeg
  • 1/4 tsp sea salt
  • unsweetened shredded coconut (to roll the balls in)

Directions

  1. Prepare all the ingredients as noted in the list.
  2. In a medium sized bowl, add all the ingredients and mix with your hand until combined (the dates will form a paste like consistency). If using a processor for this step, process until combined.
  3. From the mixture, form 8-10 even sized balls. Roll the balls in some shredded coconut and then store them in the freezer in an airtight container.
  4. They store well in the freezer for up to 3 weeks.

Recipe notes:

The Medjool dates should be soft. If your dates are hard, soak them in warm water for 20 minutes prior to using.
