Ingredients
- 1 cup raw cashews (almonds work as well)
- 1 cup Medjool dates, pitted
- 1/2 cup unsweetened shredded coconut (divided)
- 2 tbsp chia seeds
- 2 tbsp hemp seed
- zest from 1 lemon
- 2 tablespoon lemon juice
- pinch of sea salt
Directions
- Add the cashews to a food processor, pulse til chopped.
- Add all the other ingredients, except 1/4 cup shredded coconut (save til the end). Pulse until it is well combined.
- Roll the mixture into 1 tbsp size balls and roll it into the remaining coconut. (If the date mixture is sticking to your hands, slight dampen your hands to roll the ball)
- We store the balls in an air tight container in the freezer and enjoy them cold. They will be good in the freezer for up to 2 months.
