Indian-fused Oven Roasted Cauliflower

Ingredients

  • 1 small cauliflower, cut into small florets
  • 1 large red onion, cut into small wedges
  • 5 tbsp tomato sauce (or 1 tomato blended)
  • 3-4 tbsp extra virgin olive oil
  • 1 tsp turmeric
  • 3/4 tsp sea salt
  • 1 tsp chili flakes
  • 2 garlic cloves, very finely minced
  • 1/2 lemon, juiced

Directions

  1. Preheat the oven to 400°F. Line a baking pan with unbleached parchment paper, set aside.
  2. In a medium size bowl add the tomato sauce, olive oil, turmeric, sea salt, chili flakes, garlic, and lemon, whisk together.
  3. Add the cauliflower and onion to the bowl. Coat the cauliflower with the sauce. Be sure that the cauliflower and onion is evenly coated.
  4. Add the cauliflower and onion to the prepared baking pan. Add it to the oven and bake for 40-45 minutes. After cooking for 20 minutes, turn the cauliflower and onion over.
  5. Serve warm.
  6. Will keep well in the fridge in an airtight container for up to 4 days.
