Indian-fused Oven Roasted Cauliflower

Ingredients
- 1 small cauliflower, cut into small florets
- 1 large red onion, cut into small wedges
- 5 tbsp tomato sauce (or 1 tomato blended)
- 3-4 tbsp extra virgin olive oil
- 1 tsp turmeric
- 3/4 tsp sea salt
- 1 tsp chili flakes
- 2 garlic cloves, very finely minced
- 1/2 lemon, juiced
Directions
- Preheat the oven to 400°F. Line a baking pan with unbleached parchment paper, set aside.
- In a medium size bowl add the tomato sauce, olive oil, turmeric, sea salt, chili flakes, garlic, and lemon, whisk together.
- Add the cauliflower and onion to the bowl. Coat the cauliflower with the sauce. Be sure that the cauliflower and onion is evenly coated.
- Add the cauliflower and onion to the prepared baking pan. Add it to the oven and bake for 40-45 minutes. After cooking for 20 minutes, turn the cauliflower and onion over.
- Serve warm.
- Will keep well in the fridge in an airtight container for up to 4 days.
