Prep: 10 mins

Cook Time: 10mins

Servings: 4 cups

Ingredients

  • 1/2 cup water
  • 1 liter organic milk (may use 1%, 2%, or whole milk)
  • 1 packet yogurt starter (or 2 tbsp of existing yogurt with live cultures)

Directions

  1. Begin by pouring 1/2 cup of water into a medium sized sauce pan and heating it, this is to wet the pan. Now add the milk into the saucepan and heating it over medium heat until it reaches a boil, stir occasionally.
  2. Remove the saucepan from heat and allow the milk to cool to a temperature between 110-115 degrees Fahrenheit (this may take about 30-40 minutes).
  3. While in the sauce pan, add the starter or yogurt: If opting for a yogurt starter, sprinkle the contents of the starter packet on top and whisk thoroughly. Alternatively, if using existing yogurt, whisk in 2 tablespoon of yogurt.
  4. Pour the milk-yogurt mixture into clean glass jars, adjusting the quantity based on the jar size.
  5. Cover the jars with 1-2 dish towels each and place them in an unused microwave or oven for an incubation period of 6-8 hours. The longer the incubation, the firmer and tangier the yogurt will be, as well as promoting the formation of more beneficial bacteria.
  6. Upon completion of the incubation, remove the glass jars and refrigerate for at least 1-2 hours before using. Your homemade yogurt is ready to be enjoyed!
  7. Serve it plain or with your favorite toppings like fruit, honey, or granola.
  8. Remember to save a small amount of this batch to use as a starter for your next homemade yogurt adventure!
