  • ¼ cup maple syrup
  • 2 tablespoons ground flaxseeds
  • 2 teaspoons pumpkin pie spice (or a mix of cinnamon, nutmeg, ginger, and cloves)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • A pinch of salt
  • Optional add-ins: Chopped nuts (like walnuts or pecans), raisins, or dark chocolate chips for a little indulgence.

Directions

  1. Preheat the oven to 350°F (175°C) and grease an 8x8-inch baking dish. In a large bowl, combine the rolled oats, flaxseeds, pumpkin spice, baking powder, and salt.
  2. In another bowl, whisk together the pumpkin puree, milk, maple syrup, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients and mix until combined.
  4. Stir in any optional add-ins like nuts or raisins. Pour the mixture into the prepared baking dish and spread evenly.
  5. Bake for 35-40 minutes, or until the top is golden and the center is set.
  6. Let it cool slightly before slicing and serving.
