Almond Flour Chocolate Chip Cookies

Ingredients
- 1 cup blanched almond flour
- 1 cup rolled oats
- 3/4 tsp cinnamon
- 2 tbsp hemp seeds
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 cup shredded unsweetened coconut
- 2/3 cup dairy free semi-sweet chocolate chips
- 1/2 cup creamy almond butter (can swap for PB)
- 1/3 cup maple syrup
Directions
- Preheat the oven to 350°. Gather all ingredients and supplies. Line a baking sheet with unbleached parchment paper.
- In a large bowl add the almond flour, oats, cinnamon, hemp seeds, baking powder and salt, whisk and set aside.
- In the same bowl add the remaining ingredients and mix well.
- Separate the batter into even sized balls (approx 14 cookies).
- Place the cookies onto the pan and lightly press them with the back of a fork (leave just a little space between them).
- Bake in the oven for 11-13 minutes.
- Remove the pan from the oven and allow the cookies to cool on a rack for 5-7 minutes.
