Almond Flour Chocolate Chip Cookies

Ingredients

  • 1 cup blanched almond flour
  • 1 cup rolled oats
  • 3/4 tsp cinnamon
  • 2 tbsp hemp seeds
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup shredded unsweetened coconut
  • 2/3 cup dairy free semi-sweet chocolate chips
  • 1/2 cup creamy almond butter (can swap for PB)
  • 1/3 cup maple syrup

Directions

  1. Preheat the oven to 350°. Gather all ingredients and supplies. Line a baking sheet with unbleached parchment paper.
  2. In a large bowl add the almond flour, oats, cinnamon, hemp seeds, baking powder and salt, whisk and set aside.
  3. In the same bowl add the remaining ingredients and mix well.
  4. Separate the batter into even sized balls (approx 14 cookies).
  5. Place the cookies onto the pan and lightly press them with the back of a fork (leave just a little space between them).
  6. Bake in the oven for 11-13 minutes.
  7. Remove the pan from the oven and allow the cookies to cool on a rack for 5-7 minutes.
  8. Enjoy!!!
