Ingredients
- 2 cups spinach
- 1 cup arugula
- 1/3 cup red bell pepper, chopped
- 1/4 cup red onion, chopped
- 2 tbsp pine nuts
- 2 tbsp pumpkin seeds
- 1 tbsp mint leaves, torn
- 1 tbsp basil leaves, torn
- 1/2 cup cooked chickpeas (may use canned, drained and rinsed)
- 1/2 avocado, chopped
- Optional: 1/4 cup feta cheese, cut in cubes
Directions
- In a large bowl, combine all ingredients. Add 1/4 cup of the dressing and toss the salad. Toss it well so the dressing covers all the greens.
- Enjoy as 1 or share (Yes, I eat this entire salad to myself)!!
