Cucumber Mint Infusion Water

Ingredients
- 1 English cucumber, shaved into long strips using a vegetable peeler
- 1 quart water
- splash of fresh squeezed lime juice
- 8 sprigs fresh mint
- crushed ice
- 32 oz. carbonated water
Directions
- Cut the ends off of the cucumber, then using a vegetable peeler, shave long strips (lengthwise) and weave the onto 8 skewers. Set the garnish aside.
- Stir the water and lime juice together in a pitcher. Add any leftover cucumber strips and the mint leaves. Allow the cucumber-mint water to sit in the fridge for 1-2 hours.
- Fill serving cups half full with crushed ice, pour the infused water over the crushed ice, filling it halfway.
- Top the cup off with carbonated water.
- Garnish with a cucumber skewer, a mint sprig, and/or and slice of lime.
- Enjoy right away!
Recipe notes:
For alcoholic beverage, add gin or vodka.
