Ingredients
- 1 cup rolled oats
- 2 cups coconut flakes
- 1 1/4 cup pumpkin seeds, shelled
- 1 1/2 cups almonds, chopped
- 1/4 cup maple syrup
- 3 tbsp coconut oil, melted
- 2 tbsp cocoa powder
- 3/4 tsp cinnamon
- 1/2 tsp sea salt
Directions
- Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside.
- In a small bowl, add the maple syrup and melted coconut oil, cocoa powder, cinnamon, and sea salt, whisk together.
- In a large bowl, add the rolled oats, coconut flakes, pumpkin seeds, and almonds.
- Add the syrup mixture to the oat and nut mixture, toss well. Spread the mixture even onto the line baking sheet. Bake for 15-20 mins or until crisp. Stir the granola half way through bake time.
- Allow the granola to cool before storing. For best quality, store at room temperature in an airtight container for up to 3 weeks.
