Ingredients

  • 20 soft Medjool dates, pitted
  • 1 cup raw almonds
  • 1 cup raw walnuts
  • 1/3 cup cocoa powder (unsweetened)
  • 1 tbsp coconut oil, melted
  • 1 tbsp water
  • 1/2 tsp salt (adjust to taste)
  • 4 tbsp hemp seeds
  • 1/4 cup shredded unsweetened coconut

Directions

  1. Place the almonds and walnuts into a food processor and pulse until finely chopped.
  2. Add the pitted dates, cocoa powder, melted coconut oil, water, salt, and hemp seeds to the food processor with the nuts. Pulse until the mixture comes together and forms a sticky dough (test by rollin a ball with your hand).
  3. Transfer the mixture to a bowl and mix in the shredded coconut until evenly distributed.
  4. Using slightly wet hands, scoop out portions of the mixture and roll into evenly sized balls.
  5. Optional: Roll the balls in additional shredded coconut or cocoa powder for extra coating.
  6. Place the rolled balls on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to set.
  7. Once set, transfer the Chocolate Date Balls to an airtight container and store them in the fridge for up to 7 days or in the freezer for up to 3 weeks.
