Ingredients
- 20 soft Medjool dates, pitted
- 1 cup raw almonds
- 1 cup raw walnuts
- 1/3 cup cocoa powder (unsweetened)
- 1 tbsp coconut oil, melted
- 1 tbsp water
- 1/2 tsp salt (adjust to taste)
- 4 tbsp hemp seeds
- 1/4 cup shredded unsweetened coconut
Directions
- Place the almonds and walnuts into a food processor and pulse until finely chopped.
- Add the pitted dates, cocoa powder, melted coconut oil, water, salt, and hemp seeds to the food processor with the nuts. Pulse until the mixture comes together and forms a sticky dough (test by rollin a ball with your hand).
- Transfer the mixture to a bowl and mix in the shredded coconut until evenly distributed.
- Using slightly wet hands, scoop out portions of the mixture and roll into evenly sized balls.
- Optional: Roll the balls in additional shredded coconut or cocoa powder for extra coating.
- Place the rolled balls on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to set.
- Once set, transfer the Chocolate Date Balls to an airtight container and store them in the fridge for up to 7 days or in the freezer for up to 3 weeks.
