Healthy Oatmeal Cookie Recipe

Ingredients
- 1 large egg or egg alternative (1 flax egg = 1 tbsp ground flaxseed mixed with 3 tbsp water, let sit for 5 minutes)
- 1/4 cup coconut oil, melted
- 1/3 cup coconut sugar (1/2 cup if you like it sweet)
- 2 teaspoons vanilla extract
- 3/4 cup almond flour
- 1/2 cup rolled oats
- 1/4 teaspoon sea salt
- 1 1/2 teaspoons cinnamon
- Optional mix-ins: 1/3 cup vegan/dairy-free chocolate chips, 1/3 cup raisins, or 1/3 cup chopped walnuts
Directions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Prepare the flax egg in a small bowl, if using, and set aside to thicken.
- In a large bowl, whisk together the wet ingredients until well combined.
- In another bowl, mix together the dry ingredients.
- Gradually combine the dry ingredients with the wet, mixing until just combined.
- Fold in the chocolate chips, nuts, and dried fruit, if using.
- Scoop dough onto the baking sheet, spacing cookies about 2 inches apart.
- Bake for 12-15 minutes or until the edges are golden.
- Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
