Banana Bread (GF and Vegan Option)

Ingredients

  • 1 1/2 cup spelt flour
  • 1/2 cup walnuts or chocolate chips (optional)
  • 1/4 cup coconut sugar
  • 3 tbsp hemp seeds
  • 1/4 tsp salt (I prefer pink Himalayan sea salt)
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1/3 cup butter or vegan butter, room temp
  • 2 eggs (flax eggs for vegan, see notes)
  • 1/4 cup milk of choice
  • 3 spotty bananas, mashed

Directions

  1. Preheat the oven to 350˚ F
  2. Line a 8 x 4" pan with coconut oil or unbleached parchment paper. Set aside.
  3. In a large bowl, mix the dry ingredients.
  4. In another bowl, mix the wet. Now add the wet to the dry bowl, combine well but do not over mix.
  5. Bake the loaf for 50-60 minutes. Check with a toothpick to make sure it is baked through.

Recipe notes:

1 flax egg = 1 tbsp ground flax + 3 tbsp water, mix well.
