Ingredients

  • 2 cups kale, stemmed and broken into bitesize pieces
  • 1/2 medium avocado, just the flesh
  • 1-2 tbsp extra virgin olive oil
  • 1 lemon, juiced
  • 1/4 tsp sea salt
  • black pepper
  • 2 cloves garlic, minced
  • 1/4 cup red onion, diced
  • 1 cup red grapes, quartered
  • 1/4 cup walnuts, toasted

Directions

  1. Remove the stem from the kale and tear it into bite size pieces. Place in a medium size bowl.
  2. In a small bowl, smash the avocado and mix in the olive oil, lemon juice, sea salt, pepper, and minced garlic. Add it to the kale - massage it into the leaves for a few minutes.
  3. Add the onion, grapes and toasted walnuts.
  4. Serve and enjoy!
