Ingredients
- 2 cups kale, stemmed and broken into bitesize pieces
- 1/2 medium avocado, just the flesh
- 1-2 tbsp extra virgin olive oil
- 1 lemon, juiced
- 1/4 tsp sea salt
- black pepper
- 2 cloves garlic, minced
- 1/4 cup red onion, diced
- 1 cup red grapes, quartered
- 1/4 cup walnuts, toasted
Directions
- Remove the stem from the kale and tear it into bite size pieces. Place in a medium size bowl.
- In a small bowl, smash the avocado and mix in the olive oil, lemon juice, sea salt, pepper, and minced garlic. Add it to the kale - massage it into the leaves for a few minutes.
- Add the onion, grapes and toasted walnuts.
- Serve and enjoy!
